Recipe: Radish Tea Sandwich

Summer is in full swing and with summer comes summer parties. This week's recipe from the talented Sasha of 24 Carrots is a perfect summer party snack. These Radish Tea Sandwiches are light and tasty. Spicy enough to interest your taste buds but not too hot. Serve these at your next get together and be the toast of the party. Now on to the recipe!
Ingredients:
- Bread of your choice
- Sliced cucumber
- Rhibafarms radish shoots
- Almond cheese*
- 2 cups soaked, peeled almonds
- 1/2 tsp of Braags liquid aminos
- 2 tablespoons nutritional yeast
- Jalapeno Cilantro Pesto **
- 1 seeded jalapeno
- 1 cup chopped parsley
- 1 cup cilantro
- 1/3 cup chopped mint
- 1 clove garlic
- 1/4 cup onion
- 1/2 cup extra virgin olive oil
- 1/2 cup toasted pumpkin seeds
*Making the Almond Cheese
Puree almonds with Braags liquid aminos & nutritional yeast, add sea salt & black pepper to taste.
**Making the Jalapeno Cilantro Pesto
Puree jalapeno, parsley, cilantro, mint, garlic, onion, pumpkin seeds with extra virgin olive oil together till nice and smooth, salt & pepper to taste
Bringing it all together:
Spread the almond cheese and jalapeno cilantro pesto on bread slices, stack the sliced cucumber, then top with a handful of Rhibafarms radish shoots.
