Summer Treats

Summer time means it's squash time around Rhibafarms. We have heaps and heaps of squash and since variety is the spice of life, we have three kinds to choose from. This season we have pattypan, spaghetti and crooked neck squashes. Each one is delicious in it's own unique way! Pattypans are great simply sliced and lightly seared in a pan with a little olive oil. I like to use spaghetti squash exactly the way the name suggests to use it. Bake it in the oven, then scoop out the noodle like insides and add to a tomato based sauce. We are flush with more than just squash, we also have a haul of baby bell peppers. These little guys are great for salads, tacos, burritos and many other quick meals. The size makes baby bells super convent. I always end up throwing out that half used sliced bell pepper that I tried to keep in the fridge, with these baby bells you use them up as you go. My number one use for baby bells though has to be on the grill as part of a veggie kebab. Try them out, they will become your new favorite.

The pattypan and spaghetti squashes and baby bells were just added to our online market today, and we will have a harvest load available at tomorrow's Phoenix and Gilbert farmer's markets. Come pick some up and let us know your favorite way to eat these summer treats!
