Summer time means it's squash time around Rhibafarms. We have heaps and heaps of squash and since variety is the spice of life, we have three kinds to choose from. This season we have Pattypan, Spaghetti and Crooked Neck squashes. Each one is delicious in it's own unique way! Pattypans are great simply sliced and lightly seared in a pan with a little olive oil. I like to use Spaghetti squash exactly the way the name suggests to use it. Bake it in the oven, then scoop out the noodle like insides and add with a tomato based sauce. When it comes to the Crooked Neck, I prefer a simple squash soup. Check out this past post on squash for more information and ideas for what to do with squashes.
